Following the release of iOS 11.4.1, tvOS 11.4.1, watchOS 4.3.2 and HomePod 11.4.1. Apple has released macOS High Sierra 10.13.6 to the public alongside iTunes 12.8.

iTunes 12.8:

This release includes AirPlay 2 for iTunes which will have less latency and is now more reliable.  The interface now recognizes stereo paired HomePods, previous to this update both HomePods would be a separate entry. iTunes did have the functionality to play audio to AirPlay 1 devices but Wi-Fi disruptions and latency were common issues.
